Peanut Butter Balls with Chocolate Rice Krispies

These sweet and crunchy treats are easy to make and perfect for any occasion. With the delicious combination of peanut butter, honey, and chocolate, they’re sure to satisfy your sweet tooth.

Ingredients:

  • 1 cup of crunchy peanut butter (chunky adds extra texture!)
  • 6 tablespoons of honey (adds natural sweetness)
  • 1/8 teaspoon of salt (just a pinch to bring out the flavors)
  • 3 cups of Rice Krispies cereal (for that classic crunch)
  • 1 1/2 cups of vegan chocolate chips (because chocolate makes everything better!)

Instructions:

1. Prepare the Muffin Pan

  • Line a muffin pan with liners and spray them lightly with non-stick spray to make sure the treats pop out easily.

2. Melt the Peanut Butter Mixture

  • In a medium saucepan over low heat, combine the peanut butter, honey, and salt. Stir continuously until the mixture melts and combines into a smooth, cohesive texture. You’ll start to smell that amazing aroma as it melts!
  • Once the mixture is fully melted and smooth, take it off the heat.

3. Add the Rice Krispies

  • Pour the Rice Krispies cereal into the peanut butter mixture. Stir well to ensure each piece of cereal is coated with peanut butter, making sure every bite will be filled with deliciousness.

4. Fill the Muffin Liners

  • Spoon the mixture evenly into the prepared muffin liners, pressing each portion down firmly with a spoon or the back of a measuring cup. This step ensures they stick together well, so they don’t crumble when you take a bite.

5. Melt the Chocolate

  • In a separate saucepan over low heat, melt the vegan chocolate chips, stirring constantly to avoid burning. Once the chocolate is smooth and fully melted, remove it from the heat.

6. Top with Chocolate

  • Spoon a layer of melted chocolate over each peanut butter and Rice Krispies mixture in the muffin pan. You can make a thin layer for a hint of chocolate or a thick layer if you’re a chocolate lover!

7. Let Them Set

  • Place the muffin pan in the refrigerator for about 1 hour, or until the chocolate is firm and the treats are fully set.

Serving:

Remove each peanut butter ball from the liners and enjoy! These treats are great for parties, afternoon snacks, or even dessert.

Tips:

  • For extra crunch, consider adding chopped nuts or crushed pretzels to the peanut butter mixture.
  • Storage: These keep well in the refrigerator for up to a week, making them a perfect make-ahead snack.
  • Make them festive by sprinkling sea salt, chopped nuts, or holiday-themed sprinkles on top of the melted chocolate before chilling.

Enjoy your peanut butter and chocolate Rice Krispies treats!
